There is a large community of Mennonites in Gaines County. They aren't as strict (or as interesting in my opinion) as the Amish as they drive cars and tractors. But they do have naming conventions that make tracking title chains difficult as well.
It doesn't have to be a remote county to have some great stories. Lubbock County once had a man who lived in his own apartment at the top of the courthouse. Very few people ever knew he was there. Even county employees didn't have a clue. The man, who was once a petty criminal, had befriended some local officials many years ago and they had allowed him to take up residence on the fourth floor. He was quite a hermit and rarely seen. He lived up there quietly until the officials who supported him either died or were replaced and I guess someone outted him. Previous officials had given him the title of night watchmen. After his death, the apartment was torn out and renovated into a computer center for the county. This is when the story finally came out.
