David,    Would you be willing to add me to those emails.  I lived in Lafayette, LA for a summer when I was 17 (1988).  I haven't tasted any true Cajun, bayou cooking since then.  I've never thought to ask someone on a forum.  I guess this sight isn't all work and no play afterall....
