We use a Canon DR-3060.  It is a real workhorse.  It scans 40+ pages per minute and holds 100 pages.  We have over 150,000 pages on it and it has never double fed and the only time it jams is when someone forgets to pull a staple.

It is a bit expensive, at around $2,500, but compared to Fujitsu and some other high-speed scanners it is a bargain.  The closest performing machine we found was over $5,000.

If you do a lot of scanning, its worth the investment.
