The cost of this type of application is going to be greater than the other products you describe. Not necessarily because they are more complicated, but because the market is so much smaller. The companies that develop this very specific application have a limited market and need to spread their costs over a smaller group of potential customers.
For example Microsoft sells millions of copies of Word, so it can be reasonably priced for the full feature application that it is. A company that designs an application for abstractors has a much smaller potential market and most of them are fine with their pen and paper - so they are only going to sell hundreds or maybe thousands or copies.
