If their order has your fee printed on it, it is an admission that it is the correct amount due you. I agree that it is better to have a written agreement in place. However, in the absence of a written agreement you still have other arguments...express oral contract...unilateral contract...contract implied in fact...contract implied in law. If the order reflects your correct fee, the obligation is on them to explain why you were not paid in full.
