If you put in key words "Hebert" "Specialty" "Meat" you will come up with several websites.  The first one should be for Hebert's in Lafayette (or more specifically Maurice, Louisiana) which is most often given credit for the "turducken". 

They ship all over the world and all you have to do is defrost and then bake it.  My kind of holiday main dish, as it gives you more time to labor over all of the complex side dishes and desserts.

They offer quite a few other cajun delicacies such as "boudin" and chickens stuffed with seafoods.
