I occasionally get calls or emails from people who are trying to collect payment.  They have told me that they have had some success by telling them that they have listed the company for not paying either on AbstractorWatchdog or on SOT.  It may not work everytime but it doesnt hurt to try.  It certainly lets them know you are serious.
