I personally detest all spreadsheet programs (OK, I know...I'm "different").  I prefer to use my word processing program (WordPerfect -- SO MUCH BETTER THAN MICROSOFT WORD) for the kind of project you're talking about.  It's very easy and streamlined to create a table, put in your information and then re-arrange it with the click of a button.  You can even easily removed the lines that make up the boxes -- they'll still be there and you can see them as a shadow on the screen, but the client sees nothing so it doesn't even look like a spread sheet.  Just nice, neat rows of information.
